Coffee Story
Gondo and its sister washing stations are in a unique pocket of Kenya. Muranga County is just south of the most famous coffee counties of Kenya’s central province: Nyeri, Kirinyaga, and Embu. Coffees from the Gondo processing station or “factory”, as they are known in Kenya, tend to be rich and tangy, with a syrup-like texture and stone fruit notes. Individual farmers in these fertile foothills cultivate approximately 250 coffee trees each on roughly half-acre plots per family.
At Gondo, coffee cherries are hand-sorted for ripeness and floated for density before being accepted, de-pulped, and washed each day. After the coffee is washed, it’s soaked in freshwater for long periods of time to stop sugar fermentation. The coffee is then dried over a period of two weeks on raised beds, which are carefully constructed to ensure proper air circulation and temperature control for optimal drying.
